Kishu Binchotan (white charcoal) is incredibly unique. This activated carbon is made from the Japanese Ubame oak, which is native to the forests of Kishu Prefecture in Japan. It is considered to be the best fuel for barbecues, contains no chemicals whatsoever and produces hardly any smoke or ash. Binchotan activated carbon is very popular in Asia. And for good reason: it is versatile and has many advantages!
- Binchotan ignites faster than other charcoal.
- Binchotan charcoal has an extremely long burning time at a constant high heat, very similar to briquettes.
- However, it produces much less smoke and considerably less ash. Premium-quality Binchotan coal produces little or no ash. Therefore, Binchotan charcoal is also suitable for indoor grilling at home or directly at the table in restaurants; of course, you should always ensure sufficient ventilation. Binchotan charcoal also develops infrared radiation during burning, which is said to give grilled food a special taste (Japanese "umami").
- In addition, Binchotan activated carbon is also suitable as a water filter (simply boil it with water), for ionisation and as an odour trap (e.g. in the refrigerator).
In Japan, Binchotan is mainly used for local dishes such as Yakitori (grilled chicken skewers), Unagi (grilled eel), Robatayaki and Yakiniku (grilled meat). But all other kinds of meat and even fish can also be grilled with it, achieving a unique taste thanks to Binchotan.
